Recipe: Sweet Potatoes, Brussel Sprouts & Bacon

Since switching over to Paleo from a Standard American Diet, I have eaten more sweet potatoes than I have in my entire life. And brussel sprouts?!?! I wouldn’t be caught DEAD eating brussel sprouts before! And BACON! Well… *most* everyone loves bacon. If you made it to any of our recent events where some food was provided, you may have had the chance to try Leslie’s mix! I am going to take a shot at explaining how I’ve made this in the past so you can replicate it for your family!

 

Ingredients:
3 Sweet Potatoes (or really, however many you want to make), sliced into small, 1/2″ pieces (the smaller you make the pieces, the quicker they will cook and the softer they will be)
Brussel Sprouts (also, as many as you want to make), cut into quarters
8 slices – one pack of Bacon cut into 1.5″ pieces (this is also dependent on how much you looove bacon!)
Butter/coconut oil

  1. Fry the bacon in a large pot or dutch oven that has a lid. You will want a large pot in order to be able to mix everything together.
  2. Place the sweet potatoes and brussel sprouts in the pot with some extra butter or coconut oil and mix. Make sure it looks like your potatoes are completely coated with the bacon grease/butter mixture. This will ensure that they soften up nicely and also hopefully won’t stick to your pan!
  3. Cook over medium – low heat with the lid on, stirring occasionally until the potatoes are as soft as you would like them. They will typically take the longest to cook, so I base the timing of the dish on the size of the potato pieces.
  4. Enjoy!

  1. I tried this and it is awesome. My wife actually said this was THE best dish I ever made. I m planning a weekend meal of smoked bear neck roast and paleo sprouts. If your nice, I might give you some!!
